S’mores Brownies Cups

1: Preheat oven to 325°F.

2: In a bowl, mix graham cracker crumbs, melted butter, and sugar together. Reserve about 1/2 cup of the mixture and set aside.

3: Fill mini pans with the mixture and bake for 6-8 minutes.

4: Mix 1 tbsp of brown sugar into the reserved crust mixture and spread out on a baking sheet.

5: Bake until golden brown for about 7-10 minutes and let cool.

6: In another bowl, mix together eggs, cocoa powder, salt, baking powder, espresso powder, and vanilla extract.

7: Cream together melted butter and sugar until shiny, then combine with the egg mixture.

8: Add flour gently and mix, then add into the baked bottoms.

9: Bake at 350°F for 20-25 minutes or until a toothpick comes out mostly clean.

10: For the icing, cream together butter and marshmallow fluff. Mix in vanilla and pinch of salt, then add powdered sugar and mix until smooth.
