A delicious recreation of the Cheesecake Factory's brown bread made with a blend of bread and whole wheat flour, enriched with honey, molasses, and cocoa powder, resulting in a rich, flavorful loaf.
In a medium bowl, whisk together the flours, brown sugar, cocoa powder, and salt. Set aside.
In another bowl, add sugar and yeast to warm water and let yeast bloom for a few minutes.
Then add in the honey, molasses, and olive oil, and mix well.
Add in the flour mixture and knead for about 10-12 minutes, adding a bit of flour if needed.
Place the dough back in a bowl and let rise in a warm place for 1 hour or until doubled in size.
Once ready, punch the dough down and divide it into 4 pieces, rolling each into logs.
Sprinkle the bottom of a bread pan or baking pan with cornmeal and place the rolls on top.
Score the tops of the loaves, brush with warm water, and top with oats.
Cover and let rise again for another 30-40 minutes.
Bake at 350°F for 25-30 minutes.
