Delicious s'mores brownies cups combining a graham cracker crust, rich brownie filling, and a sweet marshmallow icing. Perfect for sharing with friends and family, this recipe yields 6-7 servings of indulgent treats.
Preheat the oven to 325°F. Mix together graham cracker crumbs, melted butter, and sugar. Reserve about 1/2 cup of the mixture and set aside.
Fill mini pans with the remaining crust mixture and bake for 6-8 minutes.
For the reserved crust, add in 1 tbsp of brown sugar and mix. Spread the mixture on a small baking sheet and bake until golden brown, about 7-10 minutes, then let cool.
For the brownie batter, mix eggs, cocoa powder, salt, baking powder, espresso powder, and vanilla extract in a bowl.
In another bowl, cream together melted butter and sugar until shiny and dissolved.
Combine the egg mixture with the butter mixture, then gently add flour and mix without overmixing.
Pour the brownie batter into the baked crusts and bake at 350°F for 20-25 minutes, or until a toothpick comes out mostly clean.
For the icing, cream together butter and marshmallow fluff, then add vanilla and salt.
Mix in the powdered sugar until smooth. Adjust the thickness with more powdered sugar if desired.
Let the brownies cool before icing them.
