Salted Caramel Cheesecake Cookies

1: Cream together butter and sugars well.

2: Add in egg and vanilla and mix until smooth.

3: In another bowl, whisk together flour, crushed graham crackers, salt, baking powder, and baking soda.

4: Add the dry ingredients to the wet and fold until mixed.

5: Scoop dough into balls and roll into crushed graham crackers.

6: Put on a baking sheet and press down lightly.

7: Bake at 350°F for 10-12 minutes.

8: Let cool.

9: For the cream cheese frosting, cream together cream cheese and butter using a mixer.

10: Add in vanilla and powdered sugar.

11: Top the cooled cookies with icing and then spoon on about 1-2 tsp of caramel per cookie.
