Pecan Banana Cake

1: Mash the bananas well in a bowl.

2: Add the egg, sour cream (or alternative), vanilla, butter, and sugar. Mix well.

3: In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.

4: Add the dry mixture to the wet mixture and fold gently.

5: Add in the chopped pecans and optional chocolate chips. Mix until just combined, but avoid overmixing.

6: Pour the batter into a 9x9 baking pan and add extra pecans if desired.

7: Bake at 350°F for 30-35 minutes.

8: For the cream cheese icing, beat together cream cheese and butter until smooth.

9: Gradually add powdered sugar and vanilla until combined.

10: Swirl in the caramel and spread over the cooled cake.
