These delightful lemon blueberry brownies combine sweet and zesty flavors with buttery richness. Made with fresh or frozen blueberries and topped with a blueberry reduction and glaze, they are a delicious treat perfect for any occasion.
Zest the lemon into the sugar and mix gently with your fingers while rubbing the zest in.
In another bowl, melt together the butter and white chocolate in the microwave in 15 second intervals until smooth.
Once melted and smooth, pour in the sugar/zest mixture into the butter mixture and whisk.
Add in the eggs, vanilla, and lemon juice, and mix.
Add in the salt and flour, and fold gently until almost completely mixed.
Fold in the blueberries (toss them in a bit of flour before adding to prevent sinking).
Bake at 350°F for about 27-30 minutes in a 9x9 pan.
For blueberry reduction, add blueberries, sugar, and lemon juice to a small saucepan and simmer until blueberries have cooked down. Strain out the skin and pieces and let it cool.
For blueberry glaze, mix powdered sugar and lemon juice in a small bowl, adding blueberry reduction to achieve desired consistency.
